I am so excited to share this recipe with all of you because it is healthy and delicious. Also, anything that can be made in a crockpot is a full-time working moms dream or any mom at that. I have been on a health kick lately… and by health kick I mean I have worked out three times in the last two weeks and have attempted to eat healthier meals while still snacking on oreos and icecream before bed. We can’t all be perfect, right? So, in my attempt at eating healthier I decided to try some new crockpot meals that my whole family could eat. Having a picky one year old makes finding recipes a little difficult. I came across a recipe similar to the one I am going to share on pinterest and changes it up a little bit to fit my taste and boy is it DELICIOUS! I made it last week for the first time and this past weekend my husband asked if we could have it for dinner again this week, I call that a win!! Hope you all enjoy 🙂
Ingredients:
- 3 chicken breasts (fresh not frozen)
- 1 can diced tomatoes
- 1 white onion
- 3 peppers
- 1 packet chicken taco seasoning (or fajita seasoning)
First step is to cut up all three peppers and the onion into slices. Once that is complete you can assemble your crockpot. On the bottom of your crockpot spread half of the can of tomatoes and place half of the onion and peppers over the tomatoes. Next, take each chicken breast and cover both sides with the chicken taco seasoning and place the chicken breasts in the crockpot. After that, spread the remaining can of tomatoes on the chicken breasts and then toss in the rest of your onion and peppers. Place the lid on the crockpot and cook on low for approximately 6-8 hours or until the chicken breast are fully cooked. That is all there is to this recipe. We ate our fajitas on wraps with a little bit of lettuce, shredded cheese and salsa. Extremely easy, healthy and delicious! You will not be disappointed with this meal.
